Your allergen matrix, built from your own ingredients.
Record the 14 regulated allergens per ingredient once, build dishes from those ingredients, and print a clear allergen matrix for staff and customers.
What the rules ask
- Food businesses must tell customers about 14 allergens when they are used as ingredients or processing aids (Food Standards Agency).
- The 14: celery, cereals containing gluten, crustaceans, eggs, fish, lupin, milk, molluscs, mustard, tree nuts, peanuts, sesame, soya, sulphur dioxide and sulphites.
- The FSA offers a chef's allergen menu chart; councils point small businesses to it as a starting point.
